7 Ingredients, 7 Healthy Breakfasts


I always say that my two biggest cooking strengths are baking and breakfast. I seriously love breakfast. Sometimes I get excited at night just thinking about what I'm going to have for breakfast the next day. So, yes. The love is real. I've been able to get pretty creative with breakfasts and have mastered the art of creating unique combinations using similar ingredients in order to keep my grocery bill from getting out of hand. 

Here is a week's worth of breakfast using the following seven ingredients: bananas, chia seeds, sprouted bread, strawberries, avocado, eggs, and peanut butter.

Chia Pudding + Strawberries with Scrambled Eggs
To make a simple chia pudding, whisk together 3/4 cup of almond milk, 1/4 cup of chia seeds, and a tablespoon of maple syrup. Let this sit at least two hours. I typically make my pudding in the evening and let it sit overnight. In the morning, transfer to a shallow bowl and top with sliced strawberries. Serve with a side of two scrambled eggs for a filling, protein-rich breakfast.

TIP: If the chia seeds clump together at the bottom of the bowl after being refrigerated, simply transfer to blender and blend for a few seconds.

Banana Toast with Chia Seeds + Side of Strawberries
For this super easy breakfast, toast a slice of whole grain sprouted bread and top with peanut butter. Add half of a sliced banana, a drizzle of honey, and chia seeds. Serve with sliced strawberries on the side.

Avocado Toast with Fried Egg
While a slice of sprouted bread is toasting, use a fork to mash half an avocado. Mix with salt and pepper, then spread onto the toast. Top the toast with one fried egg and for more flavor, add red chili flakes.

Scrambled Eggs + Sprouted Toast
For a breakfast classic, scramble 2-3 eggs with salt and pepper. Pair with a piece of toast with Earth Balance or real butter. 

Peanut Butter Toast, Sliced Avocado, Fried Egg, Strawberries
For a well-rounded breakfast with a little bit of everything, toast a piece of whole grain sprouted bread and top with peanut butter. On the side, have a fried egg, sliced strawberries, and 1/4 of an avocado sliced.

Baked Avocado with Egg
For something a little different, slice one avocado in half and remove the seed. Crack one egg into the middle of each avocado half and top with salt and pepper. Bake at 400 degrees for 15-20 minutes. 

Peanut Butter Smoothie, Hardboiled Egg, and Strawberries
For the smoothie, blend together one banana, almond milk, a tablespoon of peanut butter, and ice cubes. On the side, have a hardboiled egg and sliced strawberries.
