Happy Saturday, everyone! What are you up to this weekend? The weather is so nice, I'm planning on taking a long walk and getting caught up on podcasts. One day, I'd like to take a walk sans headphones, but I'm just not there yet.
Lately, I've been getting caught up on episodes of Popcast with Jamie Golden and Knox McCoy. It's the perfect podcast to listen to in the background during your daily activities. They talk about all sorts of pop-culture related things in a humorous way that doesn't really require any knowledge of the shows or movies they're referring to.
Speaking of humor, my best friend sent me this New Yorker article called "Cookie Monster on the Dole" that made my entire week. I couldn't stop thinking about how clever it was and I would crack up everytime I thought about it.
Another thing that made my week was a lunch meal that I brought to work that was so, so delicious. It was essentially a twist on the classic BLT. Instead of lettuce, I used spinach and instead of bacon, I used tempeh. The tempeh was cooked in the skillet with coconut oil, maple syrup, salt, pepper, garlic powder, and a bit of tamari for about five minutes on each side until golden brown. Super easy, quick and really, really good.
In keeping with the warm-weather theme, spring is a great time to pick up a new outdoor hobby and that doesn't necessarily mean swimming or hiking. I recommend trying something creative like watercolor painting. Here is a good set of brushes to get you started!
Finally, I didn't buy anything from the Shopbop sale but there are tons of cute items around the internet that I've been browsing like these...
Tell me about your weekend! What are you up to? Did you get anything from the Shopbop sale? Have you made any good recipes lately?
