what i ate wednesday (2.28.18)

Caitlin recently did a 'What I Eat in a Day' post and mentioned that there used to be a big thing in blogging called What I Ate Wednesday where bloggers would share their food diaries. I'm completely fascinated by food diaries and find them really helpful for practical meal ideas. Whenever I search for meals on Pinterest, they're always these super intricate things that I don't really have time to make or I don't want to buy a million ingredients. So, I thought I'd join in and, every so often, share what I ate in a day.

 This was a fairly carb-heavy day with not as many greens as I usually like to have but here's what I ate:

Breakfast:
My favorite breakfast right now is Greek yogurt with raspberries, strawberries, and a drizzle of honey on top. I'll usually have that with a hardboiled egg on the side and sometimes something starchy like a croissant for a treat.

Snacks:
I usually only snack during the day while I'm at work and today that consisted of a few baby carrots, a couple of pita chips, and an apple. We celebrated National Margarita Day at work, so I also had a tequila margarita, guac, and the best tortilla chips.

Lunch
Lunch was a baked chicken breast crusted in breadcrumbs, Manchego, and almonds with a side of roasted potato and green bean salad tossed with a homemade dressing and piquillo peppers.

I also drank a cup of water with an 8g tablet which contains spinach, wheatgrass, kale, blue green algae, spirulina, aloe vera, chlorella, and barley grass. One tablet contains as much Vitamin C as 6 oranges, as much Vitamin B5 as 15 cups of broccoli, as much Vitamin B12 as 7 glasses of milk, and as much Vitamin B6 as 6 cups of spinach! 

Dinner
I typically don't eat dinner because I'm just not hungry around that time. On this night, I had a little bit of the baked chicken breast I had leftover. 

Dessert
For dessert, I had two scoops of Ben & Jerry's Cherry Garcia. I had really been craving ice-cream for some reason so I got a little pint of this flavor. I actually used to eat the mini-cups of Cherry Garcia all the time when I interned at Unilever because they were free, so this brought me back. Haha!
