what i ate wednesday // 7.8.18


I'm back today with another edition of 'What I Ate Wednesday". This day of food was actually a pretty exciting one compared to what I've shared in the past. I ate some of my very favorite things all in one day!

breakfast // I woke up early to do yoga, then went downstairs to make breakfast which was a Mexican-inspired omelette using three eggs, tomatoes, avocado, and a shredded 3-cheese blend. I like to put a tiny bit of cheese on the outside so the top gets crispy! I also made my go-to smoothie right now by simply blending up baby kale, banana, orange juice, and MCT oil. 

lunch // Because of my work schedule on this day, I actually didn't have lunch but had a larger dinner instead.

snacks // The best snack I've discovered this year are the Nature's Bakery fig bars, particularly the raspberry and blueberry flavors. On this day, I had a pack of two raspberry bars. Later at work, I had applesauce and a mini bag of Late July chips plus lots and lots of water. 

dinner // This is one of my favorite and easiest dish to make for dinner. It's just a simple rigatoni topped with a sauce made with halved heirloom tomatoes, olive oil, salt, pepper, and balsamic vinegar. After adding the sauce to the pasta, I toss it with torn basil and creamy burrata. It's amazing.

dessert // For dessert, I had my signature chocolate cupcake with raspberry lemonade frosting. I'll be sharing the recipe for these in the coming weeks :) I paired the cupcake with a glass of Veuve Clicquot for the best combination ever.
